Ingredients
2 slices white or brown bread 2 dessertspoonsful of tomato puree (see notes) Sprinkling of grated cheese (thinly sliced will do) Dried Oregano, or mixed herbs Topping if required (see notes)

grill grillpan/baking tray cheese grater (optional)

Instructions
1. Pre-heat grill to high.
2. Meanwhile quickly grate, or thinly slice some cheese.
3. Place the bread under the grill and toast lightly on both sides.
4, Spread tomato puree on toast, and sprinkle on some grated cheese to the edges of the toast.
5. Add a topping if you like (See notes).
6. Place under grill until cheese is golden, but be careful the edges of the toast don't burn! - But if they do trim them off before serving.
7. Serve on its own or with chopped tomato, or even a small salad.

Notes
Use french bread (even yesterday's) if you have it, cut lenthways. If you have pitta bread, that also works well as a pizza base.
Toppings - because this is a grilled pizza, any toppings must be sprinkled in a fine sparse layer, otherwise the toast will burn at the edges before the cheese and topping has been heated through.
Try very thinly sliced mushrooms, peppers, onions, or tomatoes.
Or sprinkle on some finely chopped cooked meat such as chicken, ham or bacon.
