Ingredients
1 tsp butter 2 eggs 1 rasher of bacon - cut into strips 2 mushrooms - sliced pepper

frying pan slice or wooden spatula

Instructions
1. Put the butter in the frying pan over a low heat, and add the bacon and mushrooms. Cook for 10 minutes, stirring, so everything is cooked through.
2. When the bacon and mushrooms become golden, add the eggs and tilt the pan so that its base is covered with egg. Turn up the heat, and cook for abour 3 minutes.
3. Fold the omelette into itself so you end up with a folded golden brown sort of pancake. Flip this over again, so the join is on the base of the frying pan. Cook for about a minute. Serve sprinkled with pepper, with hot buttered toast on the side.

Notes
If you're nervous when you get to stage 3, then put the pan under a hot grill and it will cook from the top instead. Make sure you keep the handle away form the heat though.
