Ingredients
a lettuce 4 tomatoes half a cucumber 2 sticks celery handful of chopped fresh herbs such as parsley, coriander, or basil sprinkling of pine nuts salt and pepper olive oil white wine vinegar or lemon juice

large salad bowl sharp knife chopping board spoon and fork to serve it with

Instructions
1. Put the lettuce, tomatoes, cucumber, celery and herbs into the large bowl
2. Sprinkle over the salt and pepper,the olive oil, the white wine vinegar or lemon juice
3. Toss the salad until everything is coated in the dressing.
4. Sprinkle the fresh herbs and pine nuts over the top of the salad, and serve.

Notes
This is ideal party fodder as it is so simple to assemble, and ideal to accompany most dishes as it has neutral flavours.
You could adapt it to suit your main course by adding complementary herbs, e.g. to accompany Coronoation chicken add fresh coriander leaves to the salad, or to accompany any meat-based pasta dish, use fresh basil leaves.
Make your own croutons to sprinkle over the top:
Cut the crusts off two pieces of white bread, and cut it into small cubes between 1 and 2 cms square.
Add a little crushed garlic to a pan containing about three tablespoons of olive oil and cook gently over a low heat for about 3 minutes, then turn up the heat, and throw in the bread squares. Turn them over in the hot garlic oil until they are golden brown, then drain on kitchen paper. Cool, then sprinkle on the salad just before serving.
